A simple, foolproof Matcha cookies recipe. Taste the umami flavour of Matcha bursting through each bite, coupled with crunchiness of almonds. Fast, simple and easy.
120g all-purpose flour
7.5g Uji Matcha powder
85g unsalted butter, softened
65g powdered sugar
Half a pinch of salt
1 large egg yolk
25g crushed almonds
Sift 120g all-purpose flour and 7.5g Uji Matcha powder in a large bowl.
Using a hand mixer, beat 85g unsalted butter until smooth and creamy.
Add half a pinch of salt and mix.
Add 65g powdered sugar and mix until soft and light.
Add 1 large egg yolk and mix until well combined.
Gradually add flour and Uji Matcha powder mixture and blend until the dough is smooth.
Add 50 g crushed almonds and mix well.
Wrap dough in plastic wrap to chill in refrigerator until firm for 2 hours.
Preheat oven to 175 ºC. Line the baking tray with parchment paper.
Remove the dough and roll into balls. Place them around 2.5 cm apart on the baking sheet.
Bake the cookies at 175 ºC for about 15 minutes, or until the edge of the cookies starts to get slightly golden brown.
Remove from oven and leave it to cool.

Ceremonial Uji matcha is smooth, vibrant, and easy to love. It has a rich taste with a hint of natural sweetness and no harsh bitterness. Great for beginners.
Decided to subscribe to the matcha powder after I tried it at my friend's place. Matcha powder is not bad, and affordable! I can now make my matcha latte under 5 min at home before I leave for work :)
This matcha goes down smooth and does not cause scratchiness in the throat. I agree that it is your everyday matcha cos it is easy to drink and does not come across as too grassy which some people may not like. I however tried the other reserve matcha powders and prefer the matcha oomph in those cans. This does not mean that that the ceremonial uji matcha is not good, but based on my preference, I want it to have more oomph, like my mouth is literally mowing the lawn kind.
Since receiving this kit, I’ve made a matcha latte every morning and it has been a nice way to kick start my day. I look forward to making my own matcha latte - it’s so relaxing and a great reminder to slow down and enjoy the process. My family members have also gotten hooked!
